Shaved Fennel Salad

This salad is so refreshing, I hope you love it as much as I do!

Equipment

  • Mandolin
  • Food processor optional
  • Lemon juicer optional

Ingredients

  • 1 Large Fennel Bulb
  • 1 Honey Crisp Apple (peeled)
  • 3 Stalks Celery
  • 1/2 Cup Parmigiano Reggiano
  • 1/2 Cup Lemon Juice (about 2 medium-large lemons)
  • Sea Salt
  • Cracked Black Pepper

Instructions

  • Using a mandolin, thinly slice the Fennel bulb, Apple, Celery, and Parmigiana Reggiano. Add all ingredients to bowl
    If you have a food processor, with a blade setting of 1/4th inch or less, use this to slice all the ingredients to save some time!
  • Squeeze in lemon juice. Add Salt and Pepper
  • Toss salad and add more Lemon Juice or Parmigiana Reggiano to your liking. Enjoy!
