Refreshing Coleslaw Recipe

Coleslaw is one of my favorite side dishes. I usually make a ton of it when I'm making fish tacos. And I save the leftovers to snack on during the week. This coleslaw recipe is light and refreshing, since there is no mayo. I love a creamy coleslaw too, but I feel like I can eat a ton of this one and feel amazing!

- Honey, similarly to garlic, is also incredibly beneficial for your immune system, especially raw unfiltered honey. Honey is anti-inflammatory, an antioxidant, and has anti-bacterial properties. It's perfect for when you are coming down with a cold or cough.
- Lemon is packed with vitamin C. Lemon is also rich in antioxidants and can help prevent aging and stroke.

Equipment

  • Large bowl

Ingredients

For the coleslaw:

  • 3 cups shredded green and purple cabbage
  • 1 cup shredded carrots
  • 1 large handful of cilantro

For the dressing:

  • 1/4 cup extra virgin olive oil (EVOO)
  • 1-2 lemons juiced or limes juiced
  • 1 tbsp honey raw unfiltered honey if available
  • 2 garlic cloves
  • salt & pepper

Instructions

  • Combine the coleslaw ingredients (shredded green and purple cabbage, shredded carrots, and cilantro) in large bowl
  • Mix together the olive oil, garlic, honey, lemon juice, and salt in a measuring cup
  • Mix dressing into the coleslaw. Taste and add more lemon or salt if necessary. Enjoy as a side dish or over your fish tacos!
